Sunday Meal Prep, Meal Plan #7

It all starts with a solid meal plan, a shopping list (critical) and dishes that can be made ahead or prepaheadable.  This way at least most of the work is done on one day for a few hours eliminating mess and stress during the week.   This weeks menu starts to feature heartier, somewhat richer foods that come with the slight dip in temperature.

How to plan an efficient Meal Prep Day from your Meal Plan;

I  try to use all my different appliances to my advantage and I work that into my plan. I also try to get the more complicated recipes out of the way first, and always start with what will take the longest to cook.

My most frequently used appliances when I’m meal prepping are:

  • Instant Pot Electric Pressure Cooker
  • Rice Steamer
  • Slow Cooker

For example, this week I needed rice for two of the dishes.  Hoisin Fried Rice and Enchilada Meatball Bake.    Since Fried Rice is always better with day or two old cooked and cooled rice I started the rice before doing anything else.

Next, I started the Instant Pot Chicken Fajita Soup as it needs time to come to pressure, cook, release and then cool.  I wanted it done when the rest of my Meal Prep was done, so it was next in line.

Easy Crock Pot Beef Stroganoff was on the Menu for the day I was doing my Meal Prep.  I like dump and push start style recipes on Meal Prep days.  No fuss, low maintenance family food that makes a nice meal, but leaves me free to Meal Prep, clean up and still have some down time.    In this case, I assembled everything directly in the crock pot and got it going.   4 1/2 hours on high worked perfectly.

Next;  The Black Pepper Chicken and Sweet & Sour Shrimp were straight chopping veggies and prepping the meat.   Sauces were assembled in a mason jar and stored in the fridge until cooking day.   This makes dinner in 20 minutes a reality during the busy school and work week.

Last but not least assemble the Creamy Cauliflower Broccoli casserole and store in the fridge.  I plan to serve it with Grilled Sausages and a salad.   Preheat the oven 30 minutes before you want dinner on the table; take the casserole and let sit out while the oven preheats.  Grill, Pan Fry or Air Fry Sausages of your choice and prepare a salad while the casserole heats.   Dinner is served.
