Super Hot Summer Days call for dinner recipes that are full of flavour, crisp, fresh, and sav0ury. The flavours in this grilled Chicken Caprese Salad are just what I look for in a Main Course Summer Salad. Leftovers are incredible as a salad bowl, or in a wrap.
Fresh and light, the marinade, dressing and Greek Salsa are Prepaheadable. On cooking day, you just bake the salmon, toss the prepped vegetables with the vinaigrette and dinner is done. The Instant Pot Garlic Herb Rice Pilaf is the perfect side.
Fellow food blogger Laura Sampson from Little House Big Alaska shared this BLT Pasta Salad with me, and I knew immediately that it was going on my meal prep plan. I do most of the prep ahead for this meal. Slice the beef, prepare the sauce and then on cooking day my Instant Pot does the rest! I like to serve it with steamed or fried rice, and store bought spring rolls from Costco (those are a family fave). Leftovers are great for lunch the next day if there are any.
