I actually love it so much that I began to think about how I could recreate all of them at home. Things like the pillowy and soft pita, the herb spiced Greek chicken, veggies and all of that super creamy, tangy Greek yogurt dressing.

How to make Greek chicken
Honestly, if I needed to pick only one thing about this recipe it would be the chicken (and hey, that was a tough choice because the yogurt dressing it’s honestly mind blowing!). Oh my gosh the chicken tastes like all good things in life.
It’s juicy and tender, it’s super easy to cook and the flavors… oh my the flavors! This chicken is marinated in olive oil, lemon juice, Greek yogurt (the mediterranean substitute of buttermilk) and all the herbs and spices. Then it’s cooked in a grill to add all those smoky flavors.
What fillings use for Greek Chicken Pita Sandwiches
Like I told you earlier these sandwiches are literally stuffed to the brin with all the delicious fillings so feel free to use what you love and whatever you have on hand.
- Red onions
- Greek yogurt dressing
- Chopped parsley
You can also add:
- Black olives
- Goat cheese
- French fries (a super common filling in Greece!)
Play with the ingredients as much as you want but trust me when I say these are about to become you favorite weeknight meal!
- 1 Tbsp olive oil
- 2 Tbsp lemon juice
- 4 Tbsp Greek yogurt
- 1 Garlic clove, crushed
- ½ Tsp oregano
- ½ Tsp paprika
- ¼ Tsp coriander
- Salt and pepper to taste
- 1 Pound chicken breast
- 1 recipe Greek Yogurt Dressing
- 4 Pita Breads
- Sandwich Toppings
- Red onion, slices
- Hummus, store bought or homemade
- fresh parsley, finely chopped
- Prepare the Greek chicken. In a bowl combine all the ingredients. Cover with plastic wrap and marinate for 30 minutes at room temperature or up to 18 hours in the fridge.
- Brush a skillet with oil and heat it over medium heat. Once its hot, add
the chicken and cook for 5 minutes. Flip and cook for 4 more minutes
or until chicken is done.
- Prepare the the Greek yogurt dressing.
- In a bowl whisk together all the
ingredients until incorporated. Add more salt and pepper if needed.
- Assemble the sandwiches:
- Warm pita breads in the oven. Once they are ready
spread on a layer of hummus and Greek yogurt dressing. Stuff them with sliced grilled chicken and red onions and sprinkle with chopped
parsley. Season with a squeeze of lemon juice.
