Stir Fried Cauliflower Rice
Serve this Cauliflower Fried Rice with Stir Fry Pepper Steak for a fabulous, easy, keto friend meal that you can have on the table in 15 minutes with a little Meal prep earlier in the week.
- 2 slices of bacon, chopped
- 10 ounce package of "Riced" Cauliflower
- 1/2 cup yellow squash, diced into 1/2 inch pieces
- 1/2 of zuchini squash, diced into 1/2 inch pieces
- 1/2 small red onion, diced into 1/2 inch pieces
- 2 Tbsp vegetable oil
- 1/4 tsp of coarse black pepper
- 1 egg, scrambled
- 1 Tbsp butter
- 2 Tbsp light soy sauce
Get your bag of cauliflower rice out of the freezer and let it set on the counter while you are preparing all your ingredients.
Cook bacon until crisp, drain and chop into pieces.
In a 12 inch skillet, heat 2 Tbsp of vegetable oil until a very small drop of water dripped in the pan sizzles. Add the diced squashes and onions and saute for 1-2 minutes.
Push the squash and onions to the side of the pan, and pour the blended egg into the empty spot. You are making a scrambled egg, here. When it is cooked, stir it into the vegetables you have at the side of the pan. Add 1 Tbsp of butter at this point.
Now, add your pepper, bacon, and riced cauliflower to the pan while stirring. Add 2 Tbsp of soy sauce and stir well to coat all the cauliflower.
Cook while stirring frequently for 4 to 5 minutes more and you are ready to serve. Note that the soy will darken the cauliflower, just like it does to rice.
Plate the fried rice and top with the Pepper Steak Stir Fry,
