I forget how much I like fish, until I cook it, and then I always think, oh, I should do this more often. Today was one of those days that went totally off the rails, I got lots done, but nothing I had planned on. Ah, well, the best laid plans don’t always work out, but this recipe for Pan Fried Cajun Catfish did!
We are almost at the end of the Christmas Break and everyone’s schedules have been nutty, so I wasn’t really prepping for the last 2 weeks. Ugh, big mistake! Next year I’ll be making MORE Slow Cooker Meals that are dump and go, more Instant Pot Soups and Stews, and Mac ‘n Cheese to have ready for grab and go dinners during the craziness.
I digress, I’m not talking about Meal Prepped food, I’m talking about simple, delicious food you put together with just a few good ingredients.
Delicious Simple Food for the Win
Cajun Catfish with Browned Butter is one of those meals, with only four ingredients, (if you make the Cajun Spice Mix ahead like I do) this dish has it all. Great taste, check, Easy to Make, check, Low Carb, check, and to make it even better, my entire family enjoys this dish, so it’s definitely a keeper.
Round out your meal with a side of mashed potatoes, or rice or grits and a crisp salad or slaw. This Broccoli Slaw is a great option, and it’s Keto friendly if you’re looking to stay on the healthier side of things.
Pan Fried Cajun Catfish with Browned Butter
Ingredients
- 4 whole catfish fillets
- 2 Tbsp olive oil
- 4 Tbsp Cajun seasoning
- 1/4 cup butter unsalted
Instructions
- Drizzle olive oil over each catfish filet, sprinkle 1 Tbsp of Cajun season on each fillet and rub in to cover the entirely.
- In a large non stick skillet, over medium heat, melt butter and whisk until it begins to bubble. Add catfish fillets, and baste the tops with the melted butter from the pan as it cooks.
- Turn catfish after 3-4 minutes (depending on thickness), and again baste with the melted butter. Cook and additional 3-4 minutes and remove to a platter to serve. Pour butter, which should now have a nice browned appearance and a nutty flavour over top of fillets.
