And we are off onto Day 2 of the 30 Day Cooking Challenge!   Today we are looking at Sheet Pan Meals, and oh, the possibilities are endless.  Honestly you can cook almost any combination of Meat & Vegetables with seasonings your family likes, this kind of meal is FLEXIBLE!   We all need that.    Meal Planning Sheet Pan Meals are your friend.

Why I LOVE Meal Planning: Sheet Pan Meals

  • So many recipe choices from all different cuisines
  • Great way to use up meat and produce
  • Easy to cook; even the kids can start dinner
  • Super easy one pan clean up

Tips for making Sheet Pan Meals

  • Choose meat and vegetables that will cook for about the same time
  • Marinate your meat on Prep day
  • Make sure to cut your root vegetables small enough, 1 1/2 inch pieces usually
  • Add quicker cooking vegetables part way through the cook time

Vegetables for Sheet Pan Meals

Root Vegetables:

  • Potatoes
  • Sweet Potatoes
  • Parsnips
  • Carrots
  • Turnip

Quick Cooking Vegetables:

  • Cauliflower
  • Broccoli
  • Brussel Sprouts
  • Green Beans
  • Asparagus
  • Cherry Tomatoes
  • Green Beans
  • Zucchini

Tip:  While cooking your Sheet Pan meal make some Roasted Garlic.  Your house will smell amazing and you’ll have Roasted Garlic on hand for Sauces, Gravies, Mashed Potatoes and more!
