It’s Day ONE of the 30 Day Meal Planning Challenge. If you are cooking along with me it’s Skillet Day!
Skillet meals are quick and easy, perfect for a beginning of the week dinner, when you still have the energy to COOK! When I’m planning, I often choose a chicken or seafood dish to make, and I always slot it in earlier in the week so everything is still fresh.
October 1st is not only the first day of the Meal Planning Challenge, it’s also my Mom’s birthday. She loves seafood, so I’m making Easy Shrimp Creole, Saffron Rice, Steamed Broccoli and French Bread. I’m pretty excited.
Easy Shrimp Creole, this is my Grandmothers recipe, and she cooked it often when I was a child. Large shrimp simmered with green peppers & onions with traditional Creole seasoning. You can control the heat depending on which spice blend you use. Good for a fast, fresh weeknight meal, this one is also an excellent choice if you are having company. The easy preparation means you'll have dinner on the table in a hurry and very little clean up. What more could you ask for?
Using Quinoa makes this one skillet dinner healthy and fast, while still be rich and delicious. Chicken breasts pieces are simmered in a decadent tasting sauce with Quinoa in peas. One pan to wash, and leftovers if there are any make a great lunch the next day.
Bacon Cheeseburger Sloppy Joes, when you want the good old fashioned taste of a Cheeseburger, but not the fuss of making patties, grilling, and getting out all the toppings! This one makes it onto our Meal Planning rotation often. I always have these staple ingredients on hand, and dinner can be ready in 20 minutes. LOVE THAT!

Easy Chicken Enchilada Skillet Dinner! Enchilada's in a skillet, you read that correctly. This weeknight friendly recipe from Flavor Mosaic is one my family loves and I love that there's even less prep than making baked enchilada's without sacrificing flavor.
And last but not least... from my dear friend Laura Sampson over on the Little House Big Alaska Blog, is this Skillet Blueberry Coffee Cake.... Pop this into the oven as you sit down to and it will be ready by the time you've finished dinner. This would also be amazing for a Lazy Sunday Morning Breakfast with a good cup of coffee.
