Instant Pot Taco Soup; perfect for meal prep
It’s Sunday, and I’ve got a super busy week ahead of me as always. This Instant Pot Taco Soup is part of my Meal Prep strategy. It makes a huge batch, uses ingredients I always have on hand, and the kids love it! Now, if you haven’t hopped on the Instant Pot craze yet, that’s okay too, I’ve included instructions for the Slow Cooker and the Stove Top as well, don’t want to leave anyone out!!
Generally I meal prep on Sundays, 5 Dinners, 1 soup, and at least some lunches for the week ahead. I recently added prepping some breakfasts as well, Eggs in a Mug are AMAZING. I plan on making a batch of these and storing them in a pitcher in the fridge which will hopefully encourage the kids to eat something, anything, before they head out the door for school.
I’ve always been a Menu Planner, however meal prepping and cooking one day a week really is a game changer, and while I use some Meal Planning subscription services, I often use my own recipes as well. It’s a little more work as I have to make the Shopping List myself, but I like variety.

Instant Pot Taco Soup
Ingredients
- 2 Tablespoons olive oil
- 2 pounds ground beef
- 1 medium onion chopped
- 1 red or green pepper diced
- 2 cups frozen corn
- 1 can diced green chilies
- 1 16 oz can pinto beans drained and rinsed
- 1 16 oz can black beans drained and rinsed
- 4 Tbsp taco seasoning
- 1 Tbsp garlic powder
- 2 tsp ground cumin
- 2 1/2 cups beef broth
- 1 cup tomato sauce
- 1 28 oz cans diced tomatoes
Instructions
- DIRECTIONS:
- FOR THE INSTANT POT:
- Set the instant pot to “Saute” and add olive oil.
- Once hot, add the ground beef, onions and bell pepper, cook until meat is browned.
- Remove the insert (careful it's hot), and drain the beef. Return to insert.
- Put the meat, onions and peppers into the instant pot.
- Add corn, pinto beans, black beans, green chilies, taco seasoning, garlic powder, and cumin. Stir well.
- Add beef broth, do not stir. Pour in diced tomatoes and then tomato sauce. Don't stir
- Place lid on instant pot, set to HIGH and pressure cook for 12 minutes.
- Do a quick release, remove lid and stir. If the soup is too thick, add a little water or broth.
For the Slow Cooker:
- In a large skillet, over medium heat, add olive oil and onions. Saute 1 minute.
- Add the ground beef, bell pepper, cook until meat is browned.
- Drain browned ground beef, and transfer to a slow cooker.
- Add all remaining ingredients and stir well.
- Cook on low heat for 4 hours or high for 2 hours.
For the Stove Top:
- In a large soup pot, over medium heat, add olive oil and onions. Saute 1 minute.
- Add the ground beef, bell pepper, cook until meat is browned.
- Drain browned ground beef, and return to the soup pot.
- Add all remaining ingredients and stir well.
- Simmer on low for at least an hour with the lid on, but slightly off center to allow some steam to escape. Add more broth or water as desired.
Oh my gosh, I love tacos and when I saw this recipe I just had to make it. All the taco flavours come together so well in this taco soup. Absolutely loved it.
This taco soup is so easy and quick to make and absolutely delicious! The whole family loved it!
