Slow Roasted Chicken Quarters
This recipe for Slow Roasted Chicken Quarters is so easy to prepare, and the results are truly outstanding. Cooked low and slow the chicken is tender and moist, with savoury pan juices you can use instead of gravy.
Everyone at my dinner table LOVED these, they were shocked and how moist, juicy and flavourful these were, they labelled them, OMG Chicken Quarters. In our house, any recipe that is exceptionally good get’s labelled “OMG” and is added to our regular dinner rotation.

Slow Roasted Chicken Quarters; it's whats for dinner
Ingredients
Roasted Chicken Rub
- 1/4 cup brown sugar
- 1/4 cup smoked paprika
- 1 Tablespoon Onion powder
- 1 Tablespoons Garlic powder
- 2 teaspoons Thyme
- 2 teaspoons Oregano
- 3 teaspoons ground Cumin
- 2 teaspoons Chili Powder
- 1/2 teaspoon red chili flakes optional
- 2 teaspoons salt
- 1 teaspoon ground black pepper
Slow Roasted Chicken Quarters
- 6 Chicken quarters
- 1/4 cup olive oil
Instructions
- In a small mixing bowl combine all ingredients and mix well. The seasoning recipe above is good for at least 3 uses. Store remaining seasoning blend in an airtight jar.
- Place chicken quarters on a baking sheet, drizzle with olive oil and sprinkle with Chicken Rub to coat. Rub seasoning into chicken.
- Place chicken in oven at 300 degrees and cook for 3 hours. Turn heat up to 400 degrees and cook an additional 15-20 minutes to allow skin to crisp.
