Ingredients
Roasted Chicken Rub
1/4cupbrown sugar
1/4cupsmoked paprika
1TablespoonOnion powder
1TablespoonsGarlic powder
2teaspoonsThyme
2teaspoonsOregano
3teaspoonsground Cumin
2teaspoonsChili Powder
1/2teaspoonred chili flakesoptional

Instructions
In a small mixing bowl combine all ingredients and mix well. The seasoning recipe above is good for at least 3 uses. Store remaining seasoning blend in an airtight jar.
Place chicken quarters on a baking sheet, drizzle with olive oil and sprinkle with Chicken Rub to coat. Rub seasoning into chicken.
Place chicken in oven at 300 degrees and cook for 3 hours. Turn heat up to 400 degrees and cook an additional 15-20 minutes to allow skin to crisp.
Notes
This chicken lends itself to meal prepping. You can rub the chicken with seasoning and place in a ziplock bag in the fridge for up to 3 days. Use them for a nice relaxing meal on the weekend when they can just bake nice and slowly in the oven.You can also partially cook these quarters and then just finish them in the oven on a busy weeknight.
