Crockpot Meatballs

These are not your everyday Crockpot Meatballs.  These are Chipotle Apricot Meatballs, the perfect combination of sweet with a little heat.   The sauce simmers in the crockpot for 4-6 hours making a sticky, flavourful sauce perfect to serve over rice for dinner.
