Instant Pot Unstuffed Cabbage Soup
It’s fall and I’ve been craving soups, and comfort foods, and despite the fact that the temperature soared to 28 today, I already had my heart set on making this Instant Pot Unstuffed Cabbage Roll soup today, so I did!
We had Thanksgiving a few days ago, so I didn’t get to make my weekly Sunday Soup…. and my youngest child is not amused, I ALWAYS make soup on Sundays.

My great-grandmother was Russian, but despite that I’ve never made cabbage rolls on my own, I did many times with her when I was a young girl, but somehow, I often think I’m going too make them and then I never do. This week was the same, I had planned to make them as part of my meal prep, bought all the ingredients, and then I never got around to it.

That’s where this soup, and my favourite tool the Instant Pot come in…. Cabbage rolls, in one pot, in 30 minutes felt more reasonable to me. Unstuffed Cabbage Roll Soup here we come, I can’t wait!
The instant pot has become one of my new favourite tools, even though, yes, it’s not INSTANT, it does such a good job on all the recipes I’ve tried and converted, and I love the set it and forget it aspect.
I recently got a copy of this Instant Pot Cookbook. I appealed to me for a couple of reasons. It had Instant Pot Recipes, but wasn’t ALL IP recipes, all the recipes are geared towards healthy eating, the photographs are nice, and the print and layout were easy to read. Oh, and they include a 30 day meal plan, that actually looks doable. All pluses in my opinion, and more often than not these day I find cookbooks to be too gimmicky or specific.
This one is well rounded, and has lots of recipes I’ll try, as opposed to one or two. Creamy Tuscan Chicken with Sun-Dried Tomato was one I tried right away and was really happy with the results. Chicken, garlic, Italian herbs, Parmesan… you get the idea. It was GOOD and takes about 30 minutes total to cook. You can click the link to see some of the actual recipes inside over on Amazon.

Instant Pot Unstuffed Cabbage Roll Soup
Ingredients
- 1 large onion chopped
- 2 cloves garlic minced
- 1 1/2 lbs ground beef or beef/pork combo
- 1 1/2 Tbsp Thyme
- 2 tsp black pepper
- 1 tsp salt
- 4 cups cabbage coarsely chopped
- 5 cups beef broth
- 1/4 cup brown sugar
- 28 oz diced tomatoes with juice
- 8 oz plain crushed tomatoes
- 1/2 cup long grain rice not minute rice
Instructions
- Set your Insant Pot to Saute on high heat, add olive oil and chopped onion and saute 1-2 minutes until translucent.
- Add ground beef mixture and saute until light browned, about 3-4 minutes. It doesn’t have to be fully cooked. Stir in Thyme, Salt and Pepper. Add chopped cabbage.
- Next pour in the beef broth, diced tomatoes, crushed tomatoes, brown sugar, and the rice. Stir the top half gently avoiding getting all the way down to the cabbage as much as possible.
- Turn the saute function off, set you Instant Pot to Highe Pressure for 12 minutes. Once done, use the quick release and stir everything together. Taste and add additional salt and pepper to taste.

How to avoid the Burn warning in the Instant Pot
Okay, so learn from my mistakes, layer the ingredients as I list them below and you will be fine. The soup is DELICIOUS! If you try it, please share a comment, or post a photo and use the #loveonaplate
Here’s the trick; you need to layer the liquid, thinnest at the bottom. Put the rice in last, on the top. This way it doesn’t settle to the bottom and stick and “burn”.
In my experience the burn notice doesn’t actually always mean it’s BURNT. If it does come on, it does mean you need to stir, and generally add more liquid and start again. Reducing the pressure cooking time when you restart, depending on how long it was cooking before the burn warning came on. You don’t want overcooked mushy food.
