Mom’s Best Egg Salad

My friend Jackie Ludlage, the brilliant, funny, super wonderful Editor of Creative Scrapbooker Magazine was looking for the Best Egg salad recipe for her son…. it’s his favourite, and she doesn’t make a good one.  She wanted a recipe, a real recipe with measurements.   So, though I usually don’t measure, I decided, just for her, because she’s so amazing, that I would MEASURE and show her.   Jackie, this video is for you!

What makes this the Best Egg salad recipe?

Created from a memory I had of those little finger sandwiches with no crusts, the one’s the ladies cooking in my Baba’s church basement made for special events. It was creamy, not watery, and had a hint of sweetness to it. I combined this with my recipe for devilled eggs, and we ended up with a winner. Like many of my recipes, there’s a little twist, I like to elevate the every day!

  • Boiled eggs or Egg Loaf
  • Real Mayonnaise, not salad dressing
  • Sweet pickle relish
  • Dried Minced onion
  • Dijon Mustard
  • Sweet Paprika
  • White bread, you can modify this if you must 😊

Easiest way to cook eggs for Egg Salad?

Egg loaf in the Instant Pot! Jill from the blog This old gal is an Instant Pot QUEEN, and she inspired me to try this method. I’ve never looked back.

Egg Loaf, it doesn’t sound very appealing (see what I did there? A PEELING… okay, my kids don’t find me funny either. Basically there is no frustrating peeling with this technique. You are going to want to check it out… and you’re WELCOME!

If you don’t have an Instant Pot, the old fashioned boil on the stove method works just great, though some have trouble with grey or “green” tinted egg yolks. There are a few simple reasons this happens, and it’s easy to avoid. I’ve got some tips below to help.

And last but not least, you can use your Air Fryer! Yes, if you’re trying to keep the house cool and avoid using the stove, this is a excellent method to cook your eggs.

  • Place eggs in air fryer basket and cook on 250 for 17 minutes
  • Remove the eggs and place is a cold-water bath. Let cool.
  • Remove the eggshells and cut the eggs in half.

How to avoid boiled eggs from turning green

  • Place eggs in a medium or large size pot and pour in enough water to just cover.
  • Bring to a boil, cover and then remove from heat. Leave the lid on.
  • Let eggs sit for 10 minutes to finish cooking
  • Remove eggs from the boiling water to an ice bath to cool.
  • Peel once the eggs are cool enough to handle

Pro Tip: Use your Instant Pot to make an Egg Loaf and save on time with this NO PEELING method.

Mom’s Best Egg Salad

The perfect Egg Salad Sandwich, or so my family tells me.  It’s a little savoury, and a little sweet from the relish…. this is not just eggs and mayo!

Servings 1 cup

Ingredients
  

  • 6 extra large eggs hard boiled and peeled
  • 1/2 cup mayonnaise not Miracle Whip
  • 2-3 Tablespoons sweet relish
  • 1 Tablespoon Dijon Mustard
  • 1 pinch dried minced onion
  • 1/4 teaspoon black pepper
  • salt to taste

Instructions
 

  • In a medium bowl place the boiled eggs, and coarsely chop.
  • Add in all remaining ingredients, mix well.  Taste.. add more pepper or salt. 

Notes

Use a pastry cutter to quickly and easily chop the hard boiled eggs or egg loaf if you used that method
I don’t use Miracle whip as I find it makes it too sweet.  If that’s all you have on hand, or what you prefer, I would suggest leaving out the relish.
