2medium sweet potatoespeeled and cubed into 1/2" pieces
1/2lbbrussel sproutstrimmed and halved
1large red onioncut into medium pieces
1-2Carrotspeeled and sliced in 1/2"pieces
6 Whole Sausagesuncooked*
Drizzle:
1Tbspfresh sagechopped
1Tspfresh Rosemary leaves
2clovesgarlicminced
1/4cupapple cider vinegar
2/3cupolive oil
3TbspHoney Mustard
Salt and Pepper to taste
Instructions
Prepare all vegetables by peeled and cutting into pieces, and place on a non stick baking sheet in rows.
Place sausage on top of vegetables.
Prepare the drizzle:
In a small bowl combine all drizzle ingredients and stir to combine. Drizzle evenly over top of sausage and vegetables. Prick holes in the sausage with a fork.
Cook at 375 for 30-35 minutes until sausages are cooked through and vegetables are tender.
Notes
Serve with steamed brown rice and/or garlic bread. If you don't like brussel sprouts broccoli or cauliflower can easily be substituted and are both excellent when roasted.
