The perfect Egg Salad Sandwich, or so my family tells me. It's a little savoury, and a little sweet from the relish.... this is not just eggs and mayo!

Ingredients
6extra largeeggshard boiled and peeled
1/2cupmayonnaisenot Miracle Whip
2-3Tablespoonssweet relish
1TablespoonDijon Mustard
1pinchdried minced onion
1/4teaspoonblack pepper
salt to taste
Instructions
In a medium bowl place the boiled eggs, and coarsely chop.
Add in all remaining ingredients, mix well. Taste.. add more pepper or salt.
Notes
Use a pastry cutter to quickly and easily chop the hard boiled eggs or egg loaf if you used that methodI don't use Miracle whip as I find it makes it too sweet. If that's all you have on hand, or what you prefer, I would suggest leaving out the relish.
