Not just for Taco Tuesday, and more than just ground beef and toppings (though we love those). This perennial family favourite food profile is one that has just so many options! At our house we love everything Taco flavored. From traditional tacos, to casseroles, to soups… I’m sharing some of my most often cooked Meal Planning; Taco Recipes including my Mexican Shredded Chicken and Homemade Taco seasoning. How do you make Taco Seasoning?
It’s so simple! I use a 1 pint mason jar with a lid, combine all my spices, shake and store. The recipe below is the combination of spices we enjoy. It’s very mild, so feel free to increase the amount of chili powder, or add some additional heat with Cayenne pepper if you want to kick it up a bit on the Scoville scale.

This Mexican Shredded Chicken comes together in no time in the Instant Pot, or cook it low and slow in the slow cooker. This is one of my Workhorse recipes. I often make a batch and freeze it for easy use when I'm meal planning. Great in Taco's, Taquitos, Quesadillas, Soups, Salads and bowls. This one is a Meal Preppers dream recipe!
Instant Pot Taco Soup
This is a thick and hearty Taco flavoured soup that is ready in a flash using the Instant Pot. We like to top ours with shredded cheese and serve with crushed tortillas on top. Guaranteed to become a regular on your meal planning menu.
Instant Pot Lazy Taco Lasagna
This easy Instant Pot recipe combines two classics; Lasagna and Taco's into one fabulously easy dish. With only 5 ingredients, it's ready in 11 minutes and honestly, it takes just minutes to prepare. Serve as a main course with cheesy garlic bread topped with chopped tomatoes and jalapeno's. Leftover re-heat beautifully for lunches.
Instant Pot Taco Pasta Supreme
This is a kid pleasing, budget friendly, easy to prepare Instant Pot meal that you can have on the table in no time. After it's all cooked, I load it up just like Fries Supreme with chopped tomato, Sour Cream, Green Onions and sometimes jalapenos.
