Course Main Course
Prep Time 10 minutesminutes
Cook Time 6 hourshours
1t.ground fennel seeds
Sea salt and black pepperto taste
1/3c.organic sugar-free chicken broth
8iceberg or butter lettuce leaves
Combine all spices and the cocoa in a small bowl and season with salt and black pepper, to taste. Rub the spice mix all over the pork shoulder and transfer to a 5 or 6-quart slow cooker crock. Add the chicken broth to the crock and cook on high for 4 hours or on low for 6.
Once the cooking time is complete, use two forks to pull the pork apart while it is still in the slow cooker crock. Allow the pulled pork to remain in the juices with the slow cooker set to “warm” for 20-30 minutes to absorb more flavor.
If you want this to be like Carnita's and have some crunchy bits, transfer the shredded pork to a baking sheet and broil for few minutes until some pieces are nicely browned.
To serve, fill each lettuce leaf with some pulled pork and top with some Broccoli Slaw, or other Taco toppings of your choice.
Instant Pot Cooking Instructions
Place seasoned pork roast in the bottom of your Instant Pot, add 1 cup of chicken broth.
Set Instant Pot to HIGH pressure for 45 minutes. Then do a full NPR (Natural Pressure Release).
Open lid, remove pork roast from Instant pot and shred using two forks. Add pork back to the liquid in the Instant Pot. If you want less liquid remove some before adding the meat back into the pot or let reduce on saute for a few minutes.
