Ingredients

  • 1 1/2 cups kosher salt
  • 2 cups sugar
  • 1 1/2 gallons water
  • 6 Bay leaves
  • 6 whole black peppercorns
  • 2 oz saffron optional
  • 2 oz achiote paste
  • 4 sprigs fresh thyme
  • 2 lemons juiced, save fruit
  • 1 head garlic peeled

Instructions

  • In a large stockpot, combine the first nine ingredients; bring to a boil. Cook and stir until sugar and salt are dissolved. Remove from heat. Add cold water to cool the brine to room temperature.
