Ingredients
6skinless, boneless chicken breastscut into 1 1/2 inch pieces
1Tbspvegetable oil
3clovesgarlicminced
1Tbspfresh gingerminced
1can bamboo shootsdrained
2Tbsplow sodium soy sauceor tamari
2Tbspcooking sherryor apple cider vinegar
2tspsugar
1bunchgreen onionschopped
1/2cupchopped peanutsoptional
Instructions
Preheat oven to 375 degrees. Spray a non stick sheet pan with cooking spray.
Place marinated chicken on the sheet pan and bake for 15 minutes until almost fully cooked. Pour on Peanut Sauce, toss well and cook another 5 or 6 minutes.
Serve over rice, or rice noodles, sprinkle with green onions and chopped peanuts if desired.
Notes
To Meal Prep this recipe, simply combine all the ingredients except green onions and peanuts in a large ziplock bag and squish to combine. Will keep for up to 3 days in your refrigerator (or until the best before date). Use cooking directions on cooking day.
