In just 15 minutes, and with only 5 ingredients you can make a rich, fresh, Marinara Sauce that puts store bought to shame.... served over Fettuccine noodles with just a sprinkle of freshly grated Parmesan cheese, this dish is full of garden fresh flavours you will go back to again and again.

Ingredients
2TablespoonsOlive Oil
6-8large tomatoescored and cut into pieces
1yellow onionpeeled and quartered
2large cloves garlicpeeled and coarsely chopped
1/2cupfresh basilchopped and divided
2tspfresh oregano
Instructions
Set your instant pot to saute on low, add olive oil, garlic and onion. Saute 2-3 minutes.
Add in cut tomatoes, stir and saute 2-3 more minutes to release some of the juices
Add 1/4 cup water, 1/4 cup of chopped basil and oregano
Set Instant Pot to Pressure Cook/Manual for 8 minutes. When done, quick release.
Let mixture cool, and blend with an immersion blender until smooth. Stir in remaining 1/4 cup chopped basil and season to taste with salt and pepper.
Notes
If you prefer a Chunkier Marinara and don't mind the seeds, you can simply skim out the tomato skins which will have mostly floated to the top right after opening with a slotted spoon. I generally go with this faster method, and I like to use fresh Fettuccine which cooks in 2-3 minutes making it perfect for a weekday meal.
