Drizzle olive oil over each catfish filet, sprinkle 1 Tbsp of Cajun season on each fillet and rub in to cover the entirely.
In a large non stick skillet, over medium heat, melt butter and whisk until it begins to bubble. Add catfish fillets, and baste the tops with the melted butter from the pan as it cooks.
Turn catfish after 3-4 minutes (depending on thickness), and again baste with the melted butter. Cook and additional 3-4 minutes and remove to a platter to serve. Pour butter, which should now have a nice browned appearance and a nutty flavour over top of fillets.
Notes
I like to serve this with mashed potatoes, red beans and rice or grits and a nice coleslaw to cut down on the richness.
