112 ounce package Penne or Fusilli pasta (not cooked)
4cupspasta sauce
1Tbspdried basil
1Tbspdried oregano
1 Tbspgarlic powder
1cupwater
2cupschicken stock
1poundof chickencut into small pieces
1cupmozzarella cheesecubed
TOPPING
2cupsshredded Italian cheese mixMozzarella, Provolone, Parmesan
1cuppanko crumbs
salt and pepper to taste
Instructions
Preheat oven to 425 degrees. Spray 9 x 13 baking dish with cooking spray.
Spray baking dish with non stick spray. Pour in uncooked noodles, water and chicken stock and 2 cups of tomato sauce. The noodles should be covered.
Evenly place pieces of cubed chicken over top of noodles. Take cubes of mozzarella cheese and place randomly tucking in between the chicken pieces.
Sprinkle basil, oregano, and garlic powder over top of chicken. Pour remaining 2 cups tomato sauce over top.
Cover tightly with foil and bake for 30 minutes until chicken is cooked through and noodles are soft. Remove foil, top with Topping mixture and bake an additional 10 minutes until cheese is melted. Use the broiler for the last 5 minutes if you want to brown the top. It's not necessary but it does make the panko flakes nice and crispy!
