Instant Pot Honey Garlic Chicken Lo Mein; Skip the delivery

Ingredients
2lbschicken breasts or thighs
1Tbspolive oil
1/2teaspoonsesame oil
1 /2 cuphoney*up to 1 cup
1/2cupsweet soya sauceor low sodium
1/4cupketchup
3large cloves garlicpressed
1/2-1cupwater*see note
4cupsraw vegetables*see note
1pkgfresh Lo Mein noodles, *see note

Instructions
Turn you Instant Pot on to the saute mode, on low heat. Add olive oil let heat, add chicken pieces. Brown on all sides; about 3 minutes.
While chicken cooks, prepare the sauce. In a small bowl, combine honey, soy sauce, ketchup, and garlic, and our over chicken. Pour in water and stir. Cancel the saute mode and set to pressure cook on high. Set for 15 minutes, place lid on pot and seal valve.
While chicken and sauce cook, prepare vegetables. Slice onion, cut broccoli into bite size pieces, core, seed and cut red pepper into pieces.
When time is up on the instant pot, do a quick release. Cancel Pressure setting and set to steam.
Open lid, place prepared vegetables on top of cooked chicken and sauce. DO NOT STIR. Place lo mein noodles on top of vegetables. Place lid on and let steam 3 minutes. Open lid. Set to saute on low.
Dissolve 1 Tbsp cornstarch in 1/4 cup water. Stir into sauce, toss noodles, and vegetables with tongs, breaking up chicken into bite size pieces.
Serve in bowls topped with a sprinkle of sesame seeds and chopped green onions.
Notes
I used fresh vegetables, however you can certainly use frozen.
Use any vegetables your family enjoys, but keep in mind how long they will take to cook. Carrots for example will need to be sliced extremely thin or they will be super crunchy.
Broccoli, Cauliflower, Bell Peppers any colour, Zucchini, Celery, Onion, Asparagus all work well.
If you can't find fresh Lo Mein, you can use dry Lo Mein, just soak it in warm water to soften it a bit before using. You can really substitute any Chinese noodle, that's on the thinner side. If you go for a rice noodle, watch the cook time as they get soft really fast.
If you get the burn notice, don't panic. Cancel the pressure and do a quick release. Stir in water, and make sure nothing is stuck to the bottom of the pot. Place lid back on, seal valve and re-set time to whatever was remaining when the burn notice came on.
